I've done some paper models of various subjects. It is no easier than plastic kits. Sometimes it is more difficult. It depends on the subject and the size. I found the Epson paper model of Mercedes W06. It is a beast. There are so many pieces. All the front wing elements are separated.

1/18 scale does help a little bit.
I have seen the W06, a very difficult paper kit, imagine some of the guys I know converted it to 1/24. I found a bigger scales and definitely like it more, even when a standard for F1 paper kit still stays at 1/24. My models are available in 1/24, 1/20, 1/18, a few customers wanted 1/12. The biggest one I selled was Lotus 87 in 1/8.
